Baking at our house!

I have been trying a few new recipes lately that I have found through links on Facebook.

I have just made ... Quick & Easy Chocolate Cake slice ... will await the feedback tomorrow after school.

Quick and easy chocolate cake slice

The recipe is made in a food processor!

Next up was ... the Four Ingredient cake as banana cake

Original Version from book 2 (red) released 2008

1,1,1,1 Cake

* 1 cup desiccated coconut
* 1 cup milk (soy, almond, rice milk if lactose intolerant)
* 1 cup caster sugar (normal sugar is fine, see notes below) half a cup is my preference
* 1 cup self raising/rising flour (Gluten Free SR Flour if gluten intolerant)

SPECIAL NOTE:

Original recipe is one cup of sugar, I only ever use HALF a cup and it's perfect, in fact you can use half a cup of stevia not sugar when I have it on hand.

Preheat oven 180C/360F.

Place all ingredients in a bowl and mix. Line a loaf tin with baking paper and pour mixture in. Bake for 40 minutes.

Club Tropicana Variation of our 1,1,1,1 Cake:

* Add the zest of one Lime to the cake mix
* Ice with a white chocolate ganache, add some shredded coconut and more lime zest.

BANANA VERSION:

*Simply add a very, very ripe mashed banana (they are best) and mix thoroughly.

There are other variations that can be found on their Facebook page.

This cake was really popular with the children and my husband!! It was also very quick to make.

And another Banana Cake recipe which was really popular but not as quick to make (a few more steps)

Crazy Banana Cake with Cream Cheese Icing - Happy Hooligans

This one is worth the extra work as it is moist and delicious!! I used chocolate icing as I had some in the freezer.

The year is flying past ... April already ...

So going back to March we had the boys cricket final ... sadly they lost but they had fun. Jack received the fielding trophy for his team.

 Jack & Lachlan

The team

John & Lachan went fishing and caught some whiting.

Then the boys went tuna fishing with John out from Coffin Bay ...

Rohan had a sleep over on this boat with the Shepperd boys and their dad.

Then I had the 8th Escape2Create retreat ...

Our fabulous teachers ... Fiona, Leanne, Chantalle and Kim ...

Then the following weekend we had a Rambler fun day at Coffin Bay ...

with Bubble Soccer ...

and a day out in the boat to the White Sand Hills with the Mickans and the Pedlers ...

Then Lachlan and Rohan were selected for SAPSASA athletics ... Lachlan was the Cummins School co caption :-)

They both went well with second and third and fourth ribbons ...

And then today was Hannah's first game of netball ... to say she was excited would be an understatement!!

She had lots of fun and ball contact :-)

And that is up to date until today :-)

Rohan is 10 :-)

So our third beautiful boy turned 10 and on the weekend he had a delayed party with a couple of friends at the shack.

He had a good day and had friends slept over at the shack :-)

Hannah has decided to give cricket a go ...

Too cute :-)
