Soft shell crab ...

So tonight we tried cooking soft shell crab ...

We bought them frozen from The Fresh Fish Place in Port Lincoln.

I Googled to find a few recipes ...

We ended up coating our whole soft shell crab with a product sold through The Fresh Fish Place in Port Lincoln, by a company called Squid Inc ... lemon and pepper seasoning.

John shallow fried the whole soft shell crabs for a few minutes. I stir fried some capsicum, spring onions and brocollini with garlic, ginger, chilli and added a little bit of coconut milk at the end.

The photo doesn't look great but it tasted really good :-)

Blueberry muffins ...

I bought some cute muffin papers and found a Donna Hay recipe ... no-fail berry muffins in her latest emailed monthly newsletter so thought last night I'd give them a try.

I only used blueberries.





So far the vote is ... yum!

The recipe ...

2 cups (300g) SR flour, sifted
1 cup (220g)caster sugar
1 1/4 cups sour cream
2 eggs
1/3 cup vegetable oil
1 1/4 cups (190g) mixed berries

Preheat oven to 180 degrees. Mix flour & sugar. Whisk together sour cream, eggs & oil and stir through flour mixture. Fold through berries & spoon into 12 lightly greased 1/2 cup capacity (125ml) muffin tins.

Bake for 20 - 25 minutes or until cooked when tested with a skewer.

Dust with icing sugar to serve.

Makes 12 (with the smaller paper pans I think I got 30 mini muffins).

Healthy quiche type things!!

Hi ... today after swimming we came home via Edillilie (to pick up a truck) and then I made these ...

I found the recipe on Kate Mason's blog a while ago and they are easy and yummy.

You need:

3 slices of Mountain bread, cut into 1/4

200g low fat shreded ham

1 cup low fat grated cheese

3 eggs, whisked lightly

a splash of milk

a handful of baby spinach or rocket

10 baby tomatoes, cut up roughly with kitchen scissors

Into a bowl add eggs (whisked up), ham, cheese, tomatoes, baby spinach / rocket and splash of milk. Mix together with a large spoon.

Spray a muffin tray with olive oil spray. Line each hole with a piece of the Mountain Bread, carefully so as not to put a rip in the bread.

Spoon mixture into each spot.

Bake in 180 degree oven for about 20 - 25 mins. Carefully lift out of muffin tray and cool on a rack.

I freeze them and they are great still.
